Easy Christmas Cake- Grace Drummond-From the Kitchens of Lanark County 2003

 

2 cups flour

2 eggs

24 oz jar mincemeat

1 can Eagle Brand condensed milk

1 tsp baking soda

1/2 tsp salt

2 cups mixed fruit

1 cup walnuts

1 cup glazed cherries

2 tbsp liquour if desired

 

Line with waxed paper. Butter again. Soft flour and baking soda. Combine eggs, mincemeat, condensed milk, fruit and nuts. Fold in dry ingredients. Pour into pan. Bake at 300 degrees for 2 hours, until center springs back and is golden. Cool and turn out. Remove paper.
